OK, I've decided I can't actually come up with just one. It's impossible. So, discounting Season 2 because they were all done yesterday, I'll go with a selection of my favourites:

Season One - Angel

We get to explore Angel for the first time, find out he's a vampire (although, I didn't watch in order, so not much of a shock that one!) and the beginning of the somewhat doomed relationship.

Season Three - Band Candy

OK by this point in time this adults-turn-into-kids thing has been done too many times by our Mr Whedon, but this was the first time, and I just adore Giles in this episode.

Season Three - Graduation Day

Everyone banding together is full of win, especially following prom. All of the characters are awesome, Willow and Oz in particular.

Season Four - Hush

I think it would be some sort of criminal offence to not include this episode. It is amazing, really. The music, the acting, the Gentlemen. And in an episode without any speech they also manage to develop all of the characters relationships.

Season Four - Restless

Yet another slightly strange but very awesome episode. All a bit surreal, but a lot of fun.

Season Five - The Body and Forever

Put these two together as they kind of follow on. The Body is haunting and beautiful, and all done without music. If you want credit to your actors and directors this is it. All of the characters react perfectly (so writers here too!) and it is cut so amazingly. Forever follows it all up, and remains heartbreaking.

Season Six - Normal Again

Watching this while in a relationship with someone who was in and out of institutions and therapy? Rung home quite well. Sends shivers down my spine big time. And VERY well done too.

Season Seven - Conversations with Dead People

Beautiful and heartbreaking, again.

Season 7 - Chosen

OK, so I've missed LOADS and keep thinking of them as I'm going through. But given as we are now over 50 caps I'm going to stop there, otherwise I will just have all of the episodes, ever. Also, sorry for the sheer amount of caps, may have got carried away...
